What is the course about?
This one day course offers you the opportunity to prepare, bake and cook a selection of dishes, without the use of eggs, dairy or gluten based products. Here is an opportunity to use different ingredients such as gluten free flour and a selection of fruit, vegetables and dairy free alternatives to create dishes that cater for those with these specific allergies. You will make three items which will comprise a three course lunch or dinner ready for you to take home.

What level is the course and do I require particular skills, experience or prior qualifications?
This course is open to all candidates of all abilities. As the course suggests you will be making and using gluten free and dairy free products so some of our produce will not come out in the usual way as with the use of eggs, dairy and gluten. But they will look and taste amazing!
What topics does the course cover?
Topics covered include good practice of kitchen hygiene, general health and safety. You will cover the 14 allergens that are considered a food Hazard. You will also have an understanding of Food Allergy – which is a growing problem – the reasons for them.You will also learn how to use gluten free flour and dairy free alternatives and also discuss different raising agents.
How will I be taught and assessed?
First a demonstration will be given followed by students carrying out the tasks. Continual support and guidance will be provided throughout the session.
Are there any other costs or equipment I need to get?
Yes there are. You will also need to bring containers, so that you can take your food home securely. A ream of cling film, foil and greaseproof paper is also recommended. Apron, and two Tea- towels.
By the end of the course what should I be able to do?
This course will give you confidence to tackle new recipes associated with Allergen Awareness.
