What is the course about?

Homemade jams and pickles are one on the best things to eat when they have made from an abundance of fresh produce. Here is an opportunity to make your own, using the fruits and vegetables in season. If you have access to produce that grow naturally in gardens, parks and country side and you can pick them freely, do bring them along.If you have no produce to bring do not worry, ingredients will be provided along with jars and labels.

What level is the course and do I require particular skills, experience or prior qualifications?

This course is open to all candidates of all abilities.

What topics does the course cover?

Topics covered include good practice of kitchen hygiene, general health and safety, and the use of good preparation of brine and jams (dependant on what the students have brought). Special emphasis on working safely. As you will be working with boiling sugar care must be taken at all times and correct PPC must be worn at all times. Topics covered the importance of pectin, setting agent in jam making. How to prepare your pickling jars and bottles ready for jams and pickles. The importance of vinegar in pickling and the safe storage and use of pickled and jams and its recommended shelf life.

How will I be taught and assessed?

First a demonstration will be given followed by students carrying out the tasks. Continual support and guidance will be provided throughout the session.

Are there any other costs or equipment I need to get?

Yes there are. Greaseproof paper, Aprons, T- towels, oven gloves and a sturdy bag to take home your produce, as your jams will still be warm. *Please wear sensible toe covered shoes for health and Safety.

By the end of the course what should I be able to do?

This course will give you confidence to prepare other fruit and vegetables for jams and pickles.
